I love food. I love eating food, talking about food, looking at pictures of food, and searching for new recipes. But there is one recipe that is a staple in my house… and it’s meatloaf.
This isn’t your Mama’s recipe. This is my mom’s recipe and I’ve yet to see anyone else make it like this. I was making it one day while my friend Taylor was over, and she immediately was intrigued. I figured if she thought it looked appetizing, then I might as well share it with you on this blog.
INGREDIENTS
• 1 or 2 pounds of meat (depending on the size of your family
• 1 egg
• 1 small can of tomato juice
• 1 tablespoon of minced garlic
• 1 slice of bread
• Ham
• 1 and 1/2 cups Cheddar cheese
• French fried onions
• Garlic salt, pepper and parsley
DIRECTIONS
1. Preheat oven to 350
2. Add ground beef, egg, tomato juice, a handful of French fried onions, and garlic into a bowl. Mix well.
3. Break up slice of bread into small pieces and add to the mixture. This will work with the egg to bind it all together.
4. Once everything is mixed, get out a piece of parchment paper. Dump your mixture onto the paper and flatten out the meat.
5. Add a layer of ham to the middle
6. Add cheddar cheese over the top of the ham. However much you want. I’m a firm believer in the power of cheese. Haha
7. Gently take the right and left sides of the parchment paper to create a loaf. Press down and seal any openings in the meat mixture.
8. Carefully flip your loaf onto a cookie sheet. I put a layer of tin foil down for an easier clean up. But it is not required.
9. Top loaf with French fried onions
10. Bake for 55 minutes to 1 hour
